Cucumber is a low-calorie ingredient that is high in water (about 96%) and makes for a comforting summer food. From breakfast to dinner, it can be tweaked in many ways to make healthy and hydrating dishes. It is said to provide essential nutrients like vitamin K, vitamin C, potassium, magnesium, and fiber, which collectively support hydration and overall health. Its high fiber and water content promote better digestion and can help prevent bloating. The antioxidants present in cucumbers, especially cucurbitacins and flavonoids, help combat inflammation and protect cells from damage. It is also said that cucumber supports bone health by providing vitamin K, which is important for calcium absorption and bone repair. But sadly, this hydrating summer food is not safe anymore. In a viral moment caught on camera, a group of women were caught dipping cucumbers in a green liquid to make them fresh, which is alarming. Scroll down to read the details. According to a viral video shared on X, a group of women were caught dipping cucumbers in a green liquid, at Katihar railway station in Bihar. Shockingly, the illegal activity was conducted openly on a railway platform. Soon, when the video went viral, Railway Seva responded to the video on X, stating, “Related officials are being informed,” and added, “The matter has been forwarded to the concerned authorities for necessary action.“The NDTV report says that the Railway Protection Force (RPF) in Katihar has taken action and nine women selling cucumbers in this manner at the station have been detained and are currently being questioned.

Why is it alarming?

According to food experts, while the truth behind the liquid is still not clear, it is certainly a chemical used to improve the look and shelf life of cucumber.

Whether coloring of fruits and vegetables are permitted as per law

According to the Food Safety and Standards Authority of India (FSSAI), use of colors on fruits and vegetables are not permitted under the provisions prescribed in sub regulations 2.3.6 of Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011.

What is the green liquid?

According to FSSAI’s data, the green liquid is mostly made with Malachite Green dye, it is mostly used on green vegetables like peas or leafy greens to enhance colour. Also, it is extremely harmful to human health, often used in aquaculture but banned for direct consumption.

Health risks of artificial coloring

Artificial dyes and colors often contain harmful chemicals, such as malachite green or copper sulfate, rhodamine B and even Sudan dyes; all these chemicals are not safe for consumption. These chemicals can cause allergic reactions, especially in children and sensitive individuals. They can even lead to digestive issues like nausea, vomiting, and abdominal pain. According to experts, prolonged exposure can contribute to long-term health problems, including liver and kidney damage.
